Pumpkin Spice Muffins

This week we are embracing the fall spirit and everything pumpkin spice! Ready to start some fall baking and leave your kitchen smelling delicious? You have come to the right place!

Pumpkin Spice Muffins
Ingredients
1 cup canned pumpkin puree
2/3 cup maple syrup or honey
1/4 cup greek yogurt (plain or vanilla)
1/4 cup coconut oil
1 egg
2 tsp vanilla extract
1 2/3 cup whole wheat flour
1 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
Baking Directions
Preheat oven to 350
In a large bowl combine pumpkin, maple syrup and yogurt
Beat in the coconut oil, egg and vanilla extract
In another large bowl whisk together flour, cinnamon, nutmeg, salt, baking soda and baking powder
Add the dry ingredients to the wet and stir until well mixed
Evenly distribute batter between muffin cups
Sprinkle with pumpkin seeds and hemp hearts (optional)
Bake for 18-20 minutes
